2 tablespoons parsley
2 tablespoons of sugar
1 tablespoon of orange juice
1 pinch of salt
1 garlic clove, finely chopped
100 gr of rice flour
500 gr of almond milk
150 gr of Norée tigernuts flour natural
200 gr of Dayélian natural cashew nuts
85 ml of water
Dayélian natural cashews nuts and Norée tigernuts flour are available at the Dayélian shop in Maro-militaire and Akpakpa.
Start by preparing your cashew cheese
Pour into a blender, Dayelian natural cashew nuts, water, garlic and salt. Blend 3 to 4 minutes until the mixture is smooth.
Add the parsley. Pepper generously and mix another 30 seconds.
You will then prepare the dough. To allow the dough to rest well and give an interesting result, you can do that the day before.
In a salad bowl, mix the Norée tigernuts flour, rice flour, sugar and salt.
Dig a well in the center, and add the eggs one by one,
Then add the orange juice. Mix slightly,
Then add and dilute gradually with the milk while whisking the dough until a smooth paste and a homogeneous mixture.
Reserve the mixture cool a few hours in advance or overnight.

Heat a lightly oiled nonstick skillet and pour in a small ladle of dough.
Turn the pancake over when a few small bubbles begin to form, and repeat the process until the dough is gone.
Serve pancakes still hot or slightly warm and spread with Dayélian cheese.
